Ingredients

  • Cauliflower - 300 grams
  • Grated Parmesan cheese - 50 grams
  • Egg - 1 large
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 30 grams, crumbled
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets. Steam or boil the cauliflower until soft, about 10 minutes.
  3. Drain the cauliflower and let it cool slightly. Once cool, squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  4. In a bowl, combine the cauliflower, grated Parmesan cheese, and egg. Mix until well combined, then season with salt and pepper.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round crust about 1 cm thick. Bake for 15-20 minutes until golden and firm.
  6. While the crust is baking, heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.
  7. Add the ground lamb to the skillet and cook until browned, breaking it apart with a spoon. Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for another 5 minutes.
  8. Remove the crust from the oven. Top it with the spiced lamb mixture, spreading it evenly.
  9. Scatter halved cherry tomatoes and crumbled feta cheese on top of the lamb.
  10. Return the tart to the oven and bake for an additional 10-15 minutes, until the cheese is slightly melted and the tomatoes are softened.
  11. Remove from the oven, garnish with fresh parsley, slice, and serve hot.
