- Cauliflower - 300 grams
- Grated Parmesan cheese - 50 grams
- Egg - 1 large
- Ground lamb - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 30 grams, crumbled
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat your oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower and cut it into florets. Steam or boil the cauliflower until soft, about 10 minutes.
- Drain the cauliflower and let it cool slightly. Once cool, squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a bowl, combine the cauliflower, grated Parmesan cheese, and egg. Mix until well combined, then season with salt and pepper.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round crust about 1 cm thick. Bake for 15-20 minutes until golden and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.
- Add the ground lamb to the skillet and cook until browned, breaking it apart with a spoon. Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for another 5 minutes.
- Remove the crust from the oven. Top it with the spiced lamb mixture, spreading it evenly.
- Scatter halved cherry tomatoes and crumbled feta cheese on top of the lamb.
- Return the tart to the oven and bake for an additional 10-15 minutes, until the cheese is slightly melted and the tomatoes are softened.
- Remove from the oven, garnish with fresh parsley, slice, and serve hot.
