Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, salt, black pepper, chopped parsley, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade and mix until well coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
