Ingredients

  • Lamb shoulder - 250 grams, cut into bite-sized pieces
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add the diced lamb to the pot and cook until browned on all sides.
  3. Stir in diced carrot, red bell pepper, and tomato. Cook for another 5 minutes, stirring occasionally.
  4. Add cumin, cinnamon, turmeric, paprika, salt, and black pepper. Mix well to coat the lamb and vegetables with spices.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low and cover. Simmer for 15 minutes.
  6. While the lamb is simmering, rinse the basmati rice under cold water until the water runs clear. Drain well.
  7. After 15 minutes, add the rinsed rice to the pot, stirring gently to combine. Cover and simmer for another 15 minutes or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Stir in chopped parsley.
  9. Serve garnished with lemon wedges and enjoy your Moroccan Lamb Rice.
