- Basmati rice - 150 grams
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the pot, and cook for another 5 minutes until the vegetables are tender.
- Stir in the ground cumin, ground coriander, and paprika, cooking for an additional minute to release the spices' aromas.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices and vegetables.
- Pour in the vegetable broth, add salt and black pepper to taste, then bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove the pot from heat and let it sit, covered, for 5 minutes to allow the rice to steam.
- Fluff the rice with a fork, then stir in the chopped parsley, cilantro, and lemon juice. Adjust seasoning if necessary.
- Serve warm, garnished with toasted pine nuts if desired.
