Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams, toasted (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the pot, and cook for another 5 minutes until the vegetables are tender.
  4. Stir in the ground cumin, ground coriander, and paprika, cooking for an additional minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth, add salt and black pepper to taste, then bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
  8. Remove the pot from heat and let it sit, covered, for 5 minutes to allow the rice to steam.
  9. Fluff the rice with a fork, then stir in the chopped parsley, cilantro, and lemon juice. Adjust seasoning if necessary.
  10. Serve warm, garnished with toasted pine nuts if desired.
