- Whole wheat pasta - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Canned chickpeas - 200 grams, drained and rinsed
- Diced tomatoes - 400 grams (1 can)
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5 minutes until the vegetables are softened.
- Add the ground cumin, coriander, cinnamon, and paprika. Stir well to coat the vegetables with the spices and cook for another minute until fragrant.
- Pour in the diced tomatoes and vegetable broth, then add the drained chickpeas. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Once the sauce has thickened slightly, stir in the cooked pasta, chopped parsley, and cilantro. Mix well to combine and heat through for another 2-3 minutes.
- Remove from heat and add lemon juice, salt, and black pepper to taste. Serve warm, garnished with additional herbs if desired.
