Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, grated
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Add the diced red bell pepper and grated carrot to the pan, cooking for another 3-4 minutes until they soften.
  4. Stir in the diced tomato, cumin, coriander, paprika, saffron, salt, and black pepper. Cook for 2 minutes until the spices are fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spice mixture.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, season the fish fillets with salt and pepper. In a separate skillet, lightly oil and pan-fry the fish over medium heat for about 3-4 minutes on each side until cooked through.
  8. Once the rice is ready, fluff it with a fork and serve it on plates topped with the pan-fried fish. Garnish with fresh cilantro.
