- White fish fillets (such as cod or haddock) - 300 grams
- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Carrot - 1 medium, grated
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the diced red bell pepper and grated carrot to the pan, cooking for another 3-4 minutes until they soften.
- Stir in the diced tomato, cumin, coriander, paprika, saffron, salt, and black pepper. Cook for 2 minutes until the spices are fragrant.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spice mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, season the fish fillets with salt and pepper. In a separate skillet, lightly oil and pan-fry the fish over medium heat for about 3-4 minutes on each side until cooked through.
- Once the rice is ready, fluff it with a fork and serve it on plates topped with the pan-fried fish. Garnish with fresh cilantro.
