- White fish fillets (e.g., cod or haddock) - 300 grams
- Fresh cilantro - 30 grams, chopped
- Fresh parsley - 30 grams, chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 medium, sliced
- Bell pepper - 1 medium, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the chopped cilantro, parsley, minced garlic, ground cumin, paprika, ground coriander, cayenne pepper, 2 tablespoons of olive oil, lemon juice, salt, and black pepper to create the chermoula marinade.
- Place the fish fillets in a shallow dish and cover them with the chermoula marinade. Let them marinate for at least 15 minutes.
- While the fish is marinating, prepare the vegetables by arranging the cherry tomatoes, sliced red onion, and bell pepper on a baking tray. Drizzle with the remaining 2 tablespoons of olive oil, and sprinkle with salt and pepper.
- Once marinated, place the fish on top of the vegetables on the baking tray.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the Moroccan Fish Chermoula hot, garnished with additional fresh herbs if desired.
