- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped (about 100g)
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, chopped (about 150g)
- Carrot - 1 medium, diced (about 100g)
- Canned diced tomatoes - 400g
- Chickpeas - 1 can (400g), drained and rinsed
- Vegetable broth - 250ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish

Steps
- Start by cutting the eggplant into 1-inch cubes. Sprinkle with a little salt and let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced red bell pepper and carrot to the pot, cooking for another 5 minutes until they start to soften.
- Stir in the eggplant and cook for an additional 5 minutes, stirring frequently until the eggplant begins to soften.
- Add the canned diced tomatoes, chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper. Stir well to combine.
- Bring the mixture to a gentle simmer, then cover the pot and let it cook for 20 minutes, stirring occasionally until all the vegetables are tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley and a squeeze of lemon juice.
