  • Chickpeas - 1 can (400g), drained and rinsed
  • Vegetable broth - 250ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish
  • Lemon - for serving

Steps

  1. Start by cutting the eggplant into 1-inch cubes. Sprinkle with a little salt and let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
