Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100g, drained and rinsed
- Breadcrumbs - 50g
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Burger buns - 2
- Tahini - 2 tablespoons
- Fresh vegetables (lettuce, tomato, cucumber) - for topping
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1.5 cm thick rounds and place them on a baking sheet.
- Drizzle 1 tablespoon of olive oil over the eggplant slices and sprinkle with salt and black pepper.
- Roast the eggplant in the preheated oven for 25-30 minutes, flipping halfway through, until golden and tender.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- In a mixing bowl, combine the roasted eggplant, sautéed garlic, cumin, coriander, smoked paprika, cinnamon, chickpeas, breadcrumbs, parsley, and lemon juice. Mash together until well combined but still slightly chunky.
- Form the mixture into two patties.
- In the same skillet, add a little more oil if necessary and cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns for 2-3 minutes until lightly crispy.
- Assemble the burgers by spreading tahini on the bottom half of each bun, placing the eggplant patty on top, and adding fresh vegetables.
