Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100g, drained and rinsed
  • Breadcrumbs - 50g
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Burger buns - 2
  • Tahini - 2 tablespoons
  • Fresh vegetables (lettuce, tomato, cucumber) - for topping

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1.5 cm thick rounds and place them on a baking sheet.
  3. Drizzle 1 tablespoon of olive oil over the eggplant slices and sprinkle with salt and black pepper.
  4. Roast the eggplant in the preheated oven for 25-30 minutes, flipping halfway through, until golden and tender.
  5. In a skillet, heat the remaining tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  6. In a mixing bowl, combine the roasted eggplant, sautéed garlic, cumin, coriander, smoked paprika, cinnamon, chickpeas, breadcrumbs, parsley, and lemon juice. Mash together until well combined but still slightly chunky.
  7. Form the mixture into two patties.
  8. In the same skillet, add a little more oil if necessary and cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  9. Toast the burger buns for 2-3 minutes until lightly crispy.
  10. Assemble the burgers by spreading tahini on the bottom half of each bun, placing the eggplant patty on top, and adding fresh vegetables.
