Ingredients

  • Chickpeas - 200 grams (cooked)
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Parsley - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50 grams
  • Baking powder - 1/2 teaspoon
  • Olive oil - for frying

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the chopped red onion, minced garlic, cilantro, parsley, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix well to combine.
  3. Sprinkle in the chickpea flour and baking powder, stirring until a thick batter forms. If the mixture is too wet, add a little more chickpea flour.
  4. Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the chickpea mixture into the pan, flattening them slightly to form fritters.
  5. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the pan and place them on a paper towel to drain excess oil. Serve warm with a dipping sauce of your choice.
