- Chickpeas - 200 grams (cooked)
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Parsley - 30 grams, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50 grams
- Baking powder - 1/2 teaspoon
- Olive oil - for frying
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the chopped red onion, minced garlic, cilantro, parsley, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix well to combine.
- Sprinkle in the chickpea flour and baking powder, stirring until a thick batter forms. If the mixture is too wet, add a little more chickpea flour.
- Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the chickpea mixture into the pan, flattening them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel to drain excess oil. Serve warm with a dipping sauce of your choice.
