Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Canned chickpeas - 100 grams, drained and rinsed
  • Long-grain rice - 160 grams
  • Chicken broth - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Add the diced carrots and red bell pepper to the skillet, cooking for an additional 5 minutes until they begin to soften.
  3. Season the chicken thighs with salt, black pepper, cumin, cinnamon, coriander, and paprika. Add the chicken to the skillet, cooking until browned on all sides, about 6-8 minutes.
  4. Stir in the rice and chickpeas, mixing well to combine with the vegetables and chicken.
  5. Pour in the chicken broth, bring to a simmer, and then cover the skillet. Reduce the heat to low and cook for 20 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
