Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Raisins - 30 grams
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30 grams, slivered

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Remove the leaves and stem from the cauliflower, then chop it into florets. Pulse the cauliflower florets in a food processor until they resemble rice grains.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic, diced carrot, and bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are tender.
  5. Stir in the cauliflower rice, raisins, cumin, coriander, turmeric, cinnamon, salt, and black pepper. Mix well and cook for another 5 minutes, stirring occasionally.
  6. Transfer the mixture to a baking dish and spread it evenly. Bake in the preheated oven for 10 minutes.
  7. Remove from the oven and stir in the chopped parsley and slivered almonds before serving.
