Ingredients
- Cauliflower - 300 grams
- Almond flour - 50 grams
- Eggs - 2 large
- Green onions - 2 stalks, chopped
- Cilantro - 30 grams, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 4 tablespoons (for frying)
Steps
- Preheat a non-stick skillet over medium heat and add 2 tablespoons of olive oil.
- Cut the cauliflower into florets and steam or boil until tender, about 8-10 minutes. Drain and let it cool slightly.
- In a large mixing bowl, mash the cooked cauliflower with a fork or potato masher until mostly smooth.
- Add the almond flour, eggs, chopped green onions, cilantro, cumin, paprika, salt, black pepper, and baking powder to the bowl. Mix until well combined.
- Form the mixture into small fritters, about 2-3 inches in diameter.
- In the preheated skillet, add the remaining 2 tablespoons of olive oil. Once hot, carefully place the fritters in the skillet, cooking in batches if necessary.
- Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from skillet and place on paper towels to drain excess oil. Serve warm.
