Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Eggs - 2 large
  • Green onions - 2 stalks, chopped
  • Cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 4 tablespoons (for frying)

Steps

  1. Preheat a non-stick skillet over medium heat and add 2 tablespoons of olive oil.
  2. Cut the cauliflower into florets and steam or boil until tender, about 8-10 minutes. Drain and let it cool slightly.
  3. In a large mixing bowl, mash the cooked cauliflower with a fork or potato masher until mostly smooth.
  4. Add the almond flour, eggs, chopped green onions, cilantro, cumin, paprika, salt, black pepper, and baking powder to the bowl. Mix until well combined.
  5. Form the mixture into small fritters, about 2-3 inches in diameter.
  6. In the preheated skillet, add the remaining 2 tablespoons of olive oil. Once hot, carefully place the fritters in the skillet, cooking in batches if necessary.
  7. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove from skillet and place on paper towels to drain excess oil. Serve warm.
