Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Carrot - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower, and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble fine grains, resembling couscous. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

  7. Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
