Ingredients

  • Whole wheat pizza dough - 250 grams
  • Beetroots - 200 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red onion - 1 small, thinly sliced
  • Fresh mint - 10 grams, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Peel and slice the beetroots into thin rounds. Toss them in 1 tablespoon of olive oil, cumin, coriander, smoked paprika, salt, and black pepper. Spread them on a baking sheet and roast for 25 minutes until tender.
  3. While the beets are roasting, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled-out dough onto a pizza stone or baking tray lined with parchment paper.
  5. Once the beets are done, remove them from the oven and layer them evenly on the pizza dough. Add the sliced red onion on top.
  6. Bake the pizza in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  7. In a small bowl, whisk together tahini, lemon juice, water, and chopped mint until smooth. Adjust consistency with more water if necessary.
  8. Once the pizza is baked, remove it from the oven and drizzle the tahini sauce over the top. Sprinkle toasted pine nuts and additional mint if desired.
  9. Slice and serve warm.
