Ingredients
- Whole wheat pizza dough - 250 grams
- Beetroots - 200 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red onion - 1 small, thinly sliced
- Fresh mint - 10 grams, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 220°C (428°F).
- Peel and slice the beetroots into thin rounds. Toss them in 1 tablespoon of olive oil, cumin, coriander, smoked paprika, salt, and black pepper. Spread them on a baking sheet and roast for 25 minutes until tender.
- While the beets are roasting, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough onto a pizza stone or baking tray lined with parchment paper.
- Once the beets are done, remove them from the oven and layer them evenly on the pizza dough. Add the sliced red onion on top.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- In a small bowl, whisk together tahini, lemon juice, water, and chopped mint until smooth. Adjust consistency with more water if necessary.
- Once the pizza is baked, remove it from the oven and drizzle the tahini sauce over the top. Sprinkle toasted pine nuts and additional mint if desired.
- Slice and serve warm.
