Ingredients
- Beets - 250 grams, roasted and peeled
- Chickpeas - 1 cup, drained and rinsed
- Quinoa - 1/2 cup, cooked
- Red onion - 1/4 cup, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 1/2 cup
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Greek yogurt - 1/2 cup
- Lemon juice - 1 tablespoon
- Mint - 1/4 cup, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wrap the beets in aluminum foil and roast in the oven for about 30 minutes or until tender. Let cool, then peel and chop.
- In a large bowl, mash the roasted beets with a fork until smooth.
- Add the drained chickpeas and use a fork or potato masher to mash them together with the beets until a chunky mixture forms.
- Stir in the cooked quinoa, chopped red onion, minced garlic, cilantro, cumin, coriander, paprika, salt, and black pepper. Mix until well combined.
- Gradually add the breadcrumbs until the mixture holds together but is not overly dry.
- Form the mixture into two patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- In a small bowl, combine Greek yogurt, lemon juice, and chopped mint to make the sauce.
- Toast the whole wheat burger buns lightly in the skillet.
- Assemble the burgers by placing each patty on a bun and drizzling with the yogurt sauce. Top with extra cilantro or mint if desired.
