Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, turmeric, salt, black pepper, and lemon juice to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat the grill to medium-high heat. If using a grill pan, heat it over medium-high on the stove.
  4. Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F).
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  6. Garnish with chopped fresh cilantro and parsley before serving.
