- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, turmeric, salt, black pepper, and lemon juice to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
- Preheat the grill to medium-high heat. If using a grill pan, heat it over medium-high on the stove.

- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with chopped fresh cilantro and parsley before serving.
