Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Cut the chicken breast into 2 cm cubes and place them in a bowl.
  2. Chop the red bell pepper, zucchini, and red onion into similar-sized pieces.
  3. In a separate small bowl, whisk together the olive oil, paprika, cumin, cinnamon, garlic powder, salt, and black pepper to create a marinade.
  4. Pour the marinade over the chicken cubes and mix well, ensuring all pieces are coated. Let it marinate for at least 15 minutes.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Thread the marinated chicken, bell pepper, zucchini, and red onion onto the skewers, alternating between the chicken and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
