Ingredients

  • Whole wheat flour - 100 grams
  • Chickpea flour - 50 grams
  • Olive oil - 2 tablespoons
  • Water - 150 milliliters
  • Salt - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Chopped fresh cilantro - 2 tablespoons
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a bowl, mix the whole wheat flour, chickpea flour, salt, cumin, and paprika together until well combined.
  2. Gradually add water and olive oil to the dry ingredients, mixing until a smooth dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until elastic.
  4. Cover the dough with a damp cloth and let it rest for 15 minutes.
  5. Divide the dough into small balls (about the size of a golf ball).
  6. Roll each ball out into a thin circle, about 2-3 mm thick.
  7. Heat a non-stick skillet over medium heat and cook each circle for about 2-3 minutes on each side until golden brown.
  8. Once cooked, remove from the skillet and let them cool slightly.
  9. In a bowl, mix the chopped parsley, cilantro, and feta cheese.
  10. Spread the herb and cheese mixture on each cooked dough circle, then fold or roll them up to serve.
