- Whole wheat flour - 100 grams
- Chickpea flour - 50 grams
- Olive oil - 2 tablespoons
- Water - 150 milliliters
- Salt - 1 teaspoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Chopped fresh cilantro - 2 tablespoons
- Feta cheese - 50 grams, crumbled
Steps
- In a bowl, mix the whole wheat flour, chickpea flour, salt, cumin, and paprika together until well combined.
- Gradually add water and olive oil to the dry ingredients, mixing until a smooth dough forms.
- Knead the dough on a floured surface for about 5 minutes until elastic.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- Divide the dough into small balls (about the size of a golf ball).
- Roll each ball out into a thin circle, about 2-3 mm thick.
- Heat a non-stick skillet over medium heat and cook each circle for about 2-3 minutes on each side until golden brown.
- Once cooked, remove from the skillet and let them cool slightly.
- In a bowl, mix the chopped parsley, cilantro, and feta cheese.
- Spread the herb and cheese mixture on each cooked dough circle, then fold or roll them up to serve.
