Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ground cumin - 1 teaspoon
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Plain yogurt - 200 grams
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Crumbled feta cheese - 50 grams
  • Black olives - 30 grams, sliced
  • Paprika - 1 teaspoon

Steps

  1. In a small bowl, combine the warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, salt, and ground cumin. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for 30 minutes until doubled in size.
  5. While the dough is rising, prepare the minted yogurt by mixing the plain yogurt, minced garlic, lemon juice, chopped parsley, and chopped mint in a bowl. Season with salt to taste and refrigerate until needed.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat circle about 0.5 cm thick.
  8. Place the rolled dough onto a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes until lightly golden.
  9. Remove the pizza from the oven and spread a generous amount of the minted yogurt on top. Sprinkle crumbled feta cheese and sliced black olives over the yogurt.
  10. Drizzle with a bit of olive oil and a sprinkle of paprika before serving.
