Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Fresh mint leaves - 30 grams, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Cinnamon stick - 1 small
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted (optional)
  • Raisins - 30 grams (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cumin seeds, cooking for an additional 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the grains in the oil and spices.
  5. Pour in 300 ml of water, add the cinnamon stick, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  7. Stir in the chopped mint leaves, toasted pine nuts, and raisins (if using) before serving.
