- Basmati rice - 150 grams
- Water - 300 ml
- Fresh mint leaves - 30 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Cinnamon stick - 1 small
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 30 grams, toasted (optional)
- Raisins - 30 grams (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cumin seeds, cooking for an additional 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the grains in the oil and spices.
- Pour in 300 ml of water, add the cinnamon stick, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- Stir in the chopped mint leaves, toasted pine nuts, and raisins (if using) before serving.
