Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Fresh mint leaves - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, zested and juiced
  • Pine nuts - 30 grams, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cumin seeds, and sauté for 1-2 minutes until fragrant.
  3. Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and spices.
  4. Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water has been absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for another 5 minutes.
  6. Fluff the rice with a fork, then mix in the chopped mint, lemon zest, and lemon juice. Adjust seasoning with black pepper to taste.
  7. Serve the minted rice topped with toasted pine nuts.
