Ingredients
- Basmati rice - 150 grams
- Water - 400 milliliters
- Fresh mint leaves - 30 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, zested and juiced
- Pine nuts - 30 grams, toasted
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cumin seeds, and sauté for 1-2 minutes until fragrant.
- Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and spices.
- Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water has been absorbed.
- Remove the saucepan from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork, then mix in the chopped mint, lemon zest, and lemon juice. Adjust seasoning with black pepper to taste.
- Serve the minted rice topped with toasted pine nuts.
