Ingredients

  • quinoa - 100 grams
  • water - 250 ml
  • canned chickpeas - 200 grams, rinsed and drained
  • fresh mint - 30 grams, finely chopped
  • red onion - 50 grams, finely chopped
  • garlic - 2 cloves, minced
  • cumin powder - 1 teaspoon
  • coriander powder - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1 teaspoon
  • pepper - 1/2 teaspoon
  • ground flaxseed - 1 tablespoon
  • water (for flaxseed) - 3 tablespoons
  • olive oil - 2 tablespoons
  • gluten-free breadcrumbs - 50 grams
  • tahini - 2 tablespoons
  • lemon juice - 1 tablespoon
  • water (for sauce) - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water and then combine it with 250 ml of water in a saucepan; bring it to a boil, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for 10 minutes to thicken.
  3. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  4. Add the cooked quinoa, chopped mint, red onion, minced garlic, cumin, coriander, paprika, salt, and pepper to the mashed chickpeas; mix well.
  5. Stir in the thickened flaxseed mixture and gluten-free breadcrumbs until the mixture holds together. If too wet, add more breadcrumbs as needed.
  6. Form the mixture into 2 burger patties.
  7. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and crispy.
  8. For the tahini sauce, whisk together tahini, lemon juice, and 1 tablespoon of water until smooth. Adjust seasoning as necessary.
  9. Serve the minted quinoa burgers warm with tahini sauce drizzled on top.
