Ingredients
- quinoa - 100 grams
- water - 250 ml
- canned chickpeas - 200 grams, rinsed and drained
- fresh mint - 30 grams, finely chopped
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- cumin powder - 1 teaspoon
- coriander powder - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1 teaspoon
- pepper - 1/2 teaspoon
- ground flaxseed - 1 tablespoon
- water (for flaxseed) - 3 tablespoons
- olive oil - 2 tablespoons
- gluten-free breadcrumbs - 50 grams
- tahini - 2 tablespoons
- lemon juice - 1 tablespoon
- water (for sauce) - 1 tablespoon
Steps
- Rinse the quinoa under cold water and then combine it with 250 ml of water in a saucepan; bring it to a boil, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for 10 minutes to thicken.
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped mint, red onion, minced garlic, cumin, coriander, paprika, salt, and pepper to the mashed chickpeas; mix well.
- Stir in the thickened flaxseed mixture and gluten-free breadcrumbs until the mixture holds together. If too wet, add more breadcrumbs as needed.
- Form the mixture into 2 burger patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and crispy.
- For the tahini sauce, whisk together tahini, lemon juice, and 1 tablespoon of water until smooth. Adjust seasoning as necessary.
- Serve the minted quinoa burgers warm with tahini sauce drizzled on top.
