Ingredients

  • Quinoa - 150 grams
  • Water - 400 ml
  • Fresh mint leaves - 30 grams, chopped
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Raisins - 30 grams

Steps

  1. Rinse the quinoa under cold water in a fine mesh sieve to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  5. Fluff the quinoa with a fork and transfer it to a large mixing bowl.
  6. Add the chopped mint, parsley, olive oil, lemon juice, ground cumin, salt, black pepper, and raisins to the quinoa.
  7. Gently toss the ingredients together until well combined.
  8. Serve warm or at room temperature as a side dish.
