Ingredients
- Quinoa - 150 grams
- Water - 400 ml
- Fresh mint leaves - 30 grams, chopped
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Raisins - 30 grams
Steps
- Rinse the quinoa under cold water in a fine mesh sieve to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the quinoa with a fork and transfer it to a large mixing bowl.
- Add the chopped mint, parsley, olive oil, lemon juice, ground cumin, salt, black pepper, and raisins to the quinoa.
- Gently toss the ingredients together until well combined.
- Serve warm or at room temperature as a side dish.
