Ingredients
- Basmati rice - 150 grams
- Frozen peas - 100 grams
- Fresh mint leaves - 30 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
- Add the cumin powder, salt, and black pepper to the saucepan, stirring for another minute.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the oil and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, remove the saucepan from heat and stir in the frozen peas and lemon zest. Cover again and let it sit for another 5 minutes to steam.
- Finely chop the fresh mint leaves and gently fold them into the rice before serving.
