Ingredients

  • Basmati rice - 150 grams
  • Frozen peas - 100 grams
  • Fresh mint leaves - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat and add the minced garlic, cooking until fragrant (about 1 minute).
  3. Add the cumin powder, salt, and black pepper to the saucepan, stirring for another minute.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the oil and spices.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, remove the saucepan from heat and stir in the frozen peas and lemon zest. Cover again and let it sit for another 5 minutes to steam.
  7. Finely chop the fresh mint leaves and gently fold them into the rice before serving.
