Ingredients
- Pasta (spaghetti or linguine) - 150 grams
- Fresh or frozen peas - 200 grams
- Fresh mint leaves - 30 grams (about 1 cup, packed)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegan feta cheese (optional) - 50 grams, crumbled
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- In the last 2 minutes of pasta cooking, add the peas to the pot. Drain the pasta and peas together, reserving a small cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the ground cumin and ground coriander to the skillet, stirring for an additional minute to release their flavors.
- Add the drained pasta and peas to the skillet, tossing to combine with the spices and garlic.
- Chop the fresh mint leaves and add them to the pasta along with the lemon juice. Toss everything together, adding reserved pasta water a little at a time to loosen the sauce if necessary.
- Season with salt and black pepper to taste. Serve warm, topped with crumbled vegan feta cheese if desired.
