Ingredients

  • Fresh green peas - 200 grams
  • Cooked quinoa - 100 grams
  • Fresh mint leaves - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50 grams
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon
  • Sliced cucumbers - for topping
  • Sliced tomatoes - for topping

Steps

  1. In a large bowl, mash the fresh green peas with a fork until slightly chunky.
  2. Add the cooked quinoa, chopped mint leaves, minced garlic, cumin powder, coriander powder, paprika, salt, black pepper, and chickpea flour to the mashed peas. Mix well until combined.
  3. Form the mixture into 2 equally sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  6. Toast the whole grain burger buns lightly in the same skillet or oven.
  7. Assemble the burgers by placing the minted pea patty on the bottom half of each bun, drizzling with tahini sauce, and topping with sliced cucumbers and tomatoes. Add the top half of the bun.
  8. Serve immediately and enjoy your Minted Pea Burger!
