Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Fresh mint leaves - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)
  • Greek yogurt - 100 grams (for serving)
  • Lemon zest - 1 teaspoon (for yogurt sauce)
  • Salt - a pinch (for yogurt sauce)

Steps

  1. In a mixing bowl, combine the chopped mint, minced garlic, ground cumin, ground coriander, paprika, olive oil, lemon juice, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers, leaving a little space between each piece.
  5. Grill the skewers for 10-12 minutes, turning occasionally until the lamb is cooked to your desired doneness.
  6. While the lamb is grilling, prepare the yogurt sauce by mixing the Greek yogurt with lemon zest and a pinch of salt in a small bowl.
  7. Once the lamb skewers are done, remove them from the grill and let them rest for a few minutes.
  8. Serve the minted lamb skewers hot with the yogurt sauce on the side.
