- Ground lamb - 250 grams
- Almond flour - 100 grams
- Cauliflower (riced) - 200 grams
- Egg - 1 large
- Fresh mint (chopped) - 30 grams
- Garlic (minced) - 2 cloves
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Red onion (thinly sliced) - 50 grams
- Cherry tomatoes (halved) - 100 grams
- Fresh parsley (chopped) - 20 grams
Steps
- Preheat the oven to 220°C (428°F).
- In a large bowl, combine riced cauliflower, almond flour, egg, and a pinch of salt to form the pizza crust. Mix until well combined.
- Spread the crust mixture onto a baking sheet lined with parchment paper, shaping it into a circle about 1 cm thick. Bake for 15 minutes until golden.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic, cumin, paprika, coriander, salt, and black pepper, and sauté for 1 minute.
- Add ground lamb to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
- Remove the skillet from heat and stir in chopped mint.
- Once the crust is done, remove it from the oven and evenly distribute the lamb mixture over the top.
- Add sliced red onions and halved cherry tomatoes on top of the lamb.
- Return the pizza to the oven and bake for an additional 5-7 minutes.
- Remove from the oven, garnish with fresh parsley, and let cool for a few minutes before slicing.
