Ingredients

  • Ground lamb - 250 grams
  • Almond flour - 100 grams
  • Cauliflower (riced) - 200 grams
  • Egg - 1 large
  • Fresh mint (chopped) - 30 grams
  • Garlic (minced) - 2 cloves
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Red onion (thinly sliced) - 50 grams
  • Cherry tomatoes (halved) - 100 grams
  • Fresh parsley (chopped) - 20 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large bowl, combine riced cauliflower, almond flour, egg, and a pinch of salt to form the pizza crust. Mix until well combined.
  3. Spread the crust mixture onto a baking sheet lined with parchment paper, shaping it into a circle about 1 cm thick. Bake for 15 minutes until golden.
  4. While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic, cumin, paprika, coriander, salt, and black pepper, and sauté for 1 minute.
  5. Add ground lamb to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
  6. Remove the skillet from heat and stir in chopped mint.
  7. Once the crust is done, remove it from the oven and evenly distribute the lamb mixture over the top.
  8. Add sliced red onions and halved cherry tomatoes on top of the lamb.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes.
  10. Remove from the oven, garnish with fresh parsley, and let cool for a few minutes before slicing.
