Ingredients
- Brown rice flour - 150 grams
- Water - 200 ml
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Bell pepper - 1 medium, finely chopped
- Zucchini - 1 medium, grated
- Carrot - 1 medium, grated
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the brown rice flour, water, and salt. Mix until you have a smooth batter and let it rest for 15 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the bell pepper, zucchini, carrot, and garlic to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the cumin, paprika, black pepper, and fresh parsley. Remove from heat and set aside to cool slightly.
- Heat a non-stick pan over medium heat and add a little olive oil. Pour a ladle of the batter into the pan, swirling to form a thin crepe.
- Cook for about 2-3 minutes until the edges start to lift, then flip and cook for another 2 minutes on the other side.
- Once the crepe is cooked, remove it from the pan and place 2 tablespoons of the vegetable mixture in the center. Fold the crepe over the filling to create a pocket.
- Repeat with the remaining batter and filling. Serve warm and enjoy!
