Ingredients

  • Brown rice flour - 150 grams
  • Water - 200 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1 medium, finely chopped
  • Zucchini - 1 medium, grated
  • Carrot - 1 medium, grated
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine the brown rice flour, water, and salt. Mix until you have a smooth batter and let it rest for 15 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the bell pepper, zucchini, carrot, and garlic to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in the cumin, paprika, black pepper, and fresh parsley. Remove from heat and set aside to cool slightly.
  5. Heat a non-stick pan over medium heat and add a little olive oil. Pour a ladle of the batter into the pan, swirling to form a thin crepe.
  6. Cook for about 2-3 minutes until the edges start to lift, then flip and cook for another 2 minutes on the other side.
  7. Once the crepe is cooked, remove it from the pan and place 2 tablespoons of the vegetable mixture in the center. Fold the crepe over the filling to create a pocket.
  8. Repeat with the remaining batter and filling. Serve warm and enjoy!
