Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Cooked quinoa - 100 grams
  • Red bell pepper - 1, finely chopped
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Harissa paste - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond flour - 50 grams
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Greek yogurt - 100 grams (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)
  • Cucumber - 1/2, diced (for sauce)

Steps

  1. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, red bell pepper, red onion, garlic, parsley, cumin, coriander, paprika, cinnamon, harissa, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Gradually add the almond flour to the mixture until it holds together and is not too sticky. If the mixture is too wet, add a bit more almond flour.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare the yogurt sauce by mixing the Greek yogurt, lemon juice, and diced cucumber in a small bowl. Season with a pinch of salt.
  7. Toast the whole wheat burger buns lightly in the skillet or oven.
  8. Assemble the burgers by placing a patty on each bun and topping with the yogurt sauce.
