- Canned chickpeas - 400 grams, drained and rinsed
- Cooked quinoa - 100 grams
- Red bell pepper - 1, finely chopped
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Harissa paste - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almond flour - 50 grams
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Greek yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon (for sauce)
- Cucumber - 1/2, diced (for sauce)
Steps
- In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, red bell pepper, red onion, garlic, parsley, cumin, coriander, paprika, cinnamon, harissa, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Gradually add the almond flour to the mixture until it holds together and is not too sticky. If the mixture is too wet, add a bit more almond flour.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the yogurt sauce by mixing the Greek yogurt, lemon juice, and diced cucumber in a small bowl. Season with a pinch of salt.
- Toast the whole wheat burger buns lightly in the skillet or oven.
- Assemble the burgers by placing a patty on each bun and topping with the yogurt sauce.
