- ground lamb - 300 grams
- garlic - 2 cloves, minced
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- cayenne pepper - 1/2 teaspoon
- fresh parsley - 2 tablespoons, finely chopped
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- olive oil - 1 tablespoon
- natural casing sausage - 2 meters (for stuffing)
Steps
- In a large mixing bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, cayenne pepper, chopped parsley, salt, and black pepper.
- Mix the ingredients thoroughly until well combined, then cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
- While the mixture is marinating, prepare the sausage casings by rinsing them under cold water and soaking them in warm water for about 30 minutes.
- After marinating, stuff the sausage mixture into the prepared casings using a sausage stuffer or a piping bag, twisting sausages into 15 cm links.
- Using kitchen twine, tie off the ends of the sausages securely.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Grill the sausages for about 8-10 minutes, turning occasionally until they are browned and cooked through.
- Serve the Merguez sausage hot with a side of grilled vegetables or a fresh salad.
