Ingredients

  • ground lamb - 300 grams
  • garlic - 2 cloves, minced
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • cayenne pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, finely chopped
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • olive oil - 1 tablespoon
  • natural casing sausage - 2 meters (for stuffing)

Steps

  1. In a large mixing bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, cayenne pepper, chopped parsley, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined, then cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
  3. While the mixture is marinating, prepare the sausage casings by rinsing them under cold water and soaking them in warm water for about 30 minutes.
  4. After marinating, stuff the sausage mixture into the prepared casings using a sausage stuffer or a piping bag, twisting sausages into 15 cm links.
  5. Using kitchen twine, tie off the ends of the sausages securely.
  6. Preheat your grill to medium-high heat and lightly oil the grates.
  7. Grill the sausages for about 8-10 minutes, turning occasionally until they are browned and cooked through.
  8. Serve the Merguez sausage hot with a side of grilled vegetables or a fresh salad.
