Ingredients

  • Merguez sausage - 200 grams
  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the merguez sausage to the skillet, breaking it apart as it cooks. Sauté for about 5-7 minutes until browned and fully cooked.
  3. Add the garlic and red bell pepper to the skillet, cooking for another 3-4 minutes until the pepper is tender.
  4. Stir in the cherry tomatoes, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes soften.
  5. Add the spiralized zucchini to the skillet and toss to combine. Cook for 2-3 minutes until the zucchini is just tender.
  6. Remove from heat and stir in the chopped cilantro and lemon juice.
  7. Serve immediately, garnished with additional cilantro if desired.
