- Merguez sausage - 200 grams
- Zucchini - 2 medium, spiralized
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the merguez sausage to the skillet, breaking it apart as it cooks. Sauté for about 5-7 minutes until browned and fully cooked.
- Add the garlic and red bell pepper to the skillet, cooking for another 3-4 minutes until the pepper is tender.
- Stir in the cherry tomatoes, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes soften.
- Add the spiralized zucchini to the skillet and toss to combine. Cook for 2-3 minutes until the zucchini is just tender.
- Remove from heat and stir in the chopped cilantro and lemon juice.
- Serve immediately, garnished with additional cilantro if desired.
