Ingredients

  • Merguez sausages - 4 pieces (about 300g)
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - 2, for serving

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a marinade.
  3. Coat the Merguez sausages evenly with the marinade and let them sit for 5 minutes.
  4. Place the sausages on the grill and cook for about 4-5 minutes on each side, or until they are browned and cooked through (internal temperature should reach 70°C).
  5. Remove the sausages from the grill and let them rest for a couple of minutes.
  6. Slice the sausages diagonally and garnish with chopped fresh parsley.
  7. Serve the Merguez Grillée with lemon wedges on the side for squeezing over the top.
