Ingredients

  • Red bell pepper - 1 medium
  • Green bell pepper - 1 medium
  • Eggplant - 1 small
  • Tomatoes - 2 medium
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Cut the red and green bell peppers, eggplant, and tomatoes in half.
  3. Place the vegetables on the grill, cut side down, and cook for about 10-15 minutes or until charred and tender.
  4. Remove the vegetables from the grill and let them cool slightly.
  5. Peel the skin off the eggplant and bell peppers once cooled, and chop all the grilled vegetables into bite-sized pieces.
  6. In a mixing bowl, combine the chopped vegetables, minced garlic, chopped parsley, and cilantro.
  7. In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper.
  8. Pour the dressing over the vegetable mixture and toss gently to combine.
  9. Serve the Mechouia Salad at room temperature or chilled.
