- Red bell pepper - 1 medium
- Green bell pepper - 1 medium
- Eggplant - 1 small
- Tomatoes - 2 medium
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Cut the red and green bell peppers, eggplant, and tomatoes in half.
- Place the vegetables on the grill, cut side down, and cook for about 10-15 minutes or until charred and tender.
- Remove the vegetables from the grill and let them cool slightly.
- Peel the skin off the eggplant and bell peppers once cooled, and chop all the grilled vegetables into bite-sized pieces.
- In a mixing bowl, combine the chopped vegetables, minced garlic, chopped parsley, and cilantro.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper.
- Pour the dressing over the vegetable mixture and toss gently to combine.
