- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
- Increase the heat to medium-high and add the ground lamb to the skillet. Cook until browned, breaking it into small pieces, about 7-10 minutes.
- Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse the meat.
- In a separate pot, heat the remaining tablespoon of olive oil over medium heat. Add the zucchini noodles (or keto penne) and sauté for 3-4 minutes until just tender.
- Remove the skillet from heat and stir in the lemon juice and chopped parsley into the lamb mixture.
- Serve the spiced lamb over the zucchini noodles, garnishing with additional parsley if desired.
