Ingredients

  • Zucchini noodles (or keto penne) - 200 grams
  • Ground lamb - 250 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
  3. Increase the heat to medium-high and add the ground lamb to the skillet. Cook until browned, breaking it into small pieces, about 7-10 minutes.
  4. Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse the meat.
  5. In a separate pot, heat the remaining tablespoon of olive oil over medium heat. Add the zucchini noodles (or keto penne) and sauté for 3-4 minutes until just tender.
  6. Remove the skillet from heat and stir in the lemon juice and chopped parsley into the lamb mixture.
  7. Serve the spiced lamb over the zucchini noodles, garnishing with additional parsley if desired.
