- Zucchini - 2 medium
- Ground lamb - 250 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled
Steps
- Spiralize the zucchini into noodles using a spiralizer or julienne peeler and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
- Add the ground lamb to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse the meat.
- Add the spiralized zucchini to the skillet and toss gently with the lamb mixture. Cook for 3-5 minutes until the zucchini is slightly tender but still al dente.
- Remove from heat and stir in the fresh parsley and lemon juice.
- Serve topped with crumbled feta cheese.
