  • Ground lamb - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled

Steps

  1. Spiralize the zucchini into noodles using a spiralizer or julienne peeler and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
  3. Add the ground lamb to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to let the spices infuse the meat.
  5. Add the spiralized zucchini to the skillet and toss gently with the lamb mixture. Cook for 3-5 minutes until the zucchini is slightly tender but still al dente.
  6. Remove from heat and stir in the fresh parsley and lemon juice.
