Ingredients

  • Lamb shoulder - 500 grams
  • Garlic - 4 cloves, minced
  • Cumin - 2 teaspoons
  • Coriander - 2 teaspoons
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, combine minced garlic, cumin, coriander, paprika, cayenne pepper, salt, black pepper, olive oil, and lemon juice to create a marinade.
  2. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well coated. Cover and marinate in the refrigerator for at least 2 hours, or overnight for best flavor.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Remove the lamb from the marinade and thread the pieces onto skewers, if possible.
  5. Grill the lamb for about 15-20 minutes on each side, or until it reaches your desired level of doneness, basting occasionally with any remaining marinade.
  6. Once cooked, remove the lamb from the grill and let it rest for 5 minutes.
  7. Garnish with fresh chopped parsley before serving.
