- Almond flour - 200 grams
- Tapioca flour - 50 grams
- Psyllium husk - 5 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 150 ml
- Olive oil - 2 tablespoons
- Ground lamb - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon (for lamb mixture)
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a mixing bowl, combine almond flour, tapioca flour, psyllium husk, baking powder, and salt.
- Add water and olive oil to the dry ingredients and mix until a dough forms. Knead for a few minutes until smooth.
- Divide the dough into two equal parts and roll each part into a circle about 1/4 inch thick.
- Heat a non-stick skillet over medium heat and cook each flatbread for about 3-4 minutes on each side until golden and cooked through. Remove from heat and set aside.
- In the same skillet, add a little olive oil and sauté the chopped onion until translucent, about 3 minutes.
- Add minced garlic, ground lamb, cumin, paprika, cinnamon, salt, and black pepper to the skillet. Cook until the lamb is browned and cooked through, about 8-10 minutes.
- Remove the lamb mixture from the heat and stir in the chopped parsley.
- Top each flatbread with the spiced lamb mixture and sprinkle with crumbled feta cheese if using.
