Ingredients

  • Almond flour - 200 grams
  • Tapioca flour - 50 grams
  • Psyllium husk - 5 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 150 ml
  • Olive oil - 2 tablespoons
  • Ground lamb - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon (for lamb mixture)
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, combine almond flour, tapioca flour, psyllium husk, baking powder, and salt.
  2. Add water and olive oil to the dry ingredients and mix until a dough forms. Knead for a few minutes until smooth.
  3. Divide the dough into two equal parts and roll each part into a circle about 1/4 inch thick.
  4. Heat a non-stick skillet over medium heat and cook each flatbread for about 3-4 minutes on each side until golden and cooked through. Remove from heat and set aside.
  5. In the same skillet, add a little olive oil and sauté the chopped onion until translucent, about 3 minutes.
  6. Add minced garlic, ground lamb, cumin, paprika, cinnamon, salt, and black pepper to the skillet. Cook until the lamb is browned and cooked through, about 8-10 minutes.
  7. Remove the lamb mixture from the heat and stir in the chopped parsley.
  8. Top each flatbread with the spiced lamb mixture and sprinkle with crumbled feta cheese if using.
