  • Lamb shoulder - 500 grams

  • Coriander - 2 teaspoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a small bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, cinnamon, parsley, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb shoulder, ensuring it is thoroughly coated. Let it marinate for at least 30 minutes at room temperature (or refrigerate for up to 4 hours for deeper flavor).
  4. Place the marinated lamb in a roasting pan and cover it with aluminum foil.
  5. Roast the lamb in the preheated oven for 90 minutes, removing the foil for the last 30 minutes to allow the meat to brown.
  6. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.
  7. Serve the lamb slices warm, garnished with additional chopped parsley if desired.
