- Paprika - 1 teaspoon

- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 160°C (320°F).
- In a small bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, cinnamon, parsley, and lemon juice to create a marinade.
- Rub the marinade all over the lamb shoulder, ensuring it is thoroughly coated. Let it marinate for at least 30 minutes at room temperature (or refrigerate for up to 4 hours for deeper flavor).
- Place the marinated lamb in a roasting pan and cover it with aluminum foil.
- Roast the lamb in the preheated oven for 90 minutes, removing the foil for the last 30 minutes to allow the meat to brown.
- Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.
- Serve the lamb slices warm, garnished with additional chopped parsley if desired.
