- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Water - 200 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a spice paste.
- Rub the spice paste all over the lamb shoulder, ensuring it is evenly coated.
- In a baking dish, add the water and place the spiced lamb on top.
- Cover the dish with aluminum foil and roast in the preheated oven for 1 hour.
- After 1 hour, remove the foil and roast for an additional 30 minutes to allow the lamb to brown.
- Once cooked, remove the lamb from the oven and let it rest for 10 minutes.
- Drizzle lemon juice over the lamb and garnish with fresh parsley and cilantro before serving.
