Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Water - 200 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper to create a spice paste.
  3. Rub the spice paste all over the lamb shoulder, ensuring it is evenly coated.
  4. In a baking dish, add the water and place the spiced lamb on top.
  5. Cover the dish with aluminum foil and roast in the preheated oven for 1 hour.
  6. After 1 hour, remove the foil and roast for an additional 30 minutes to allow the lamb to brown.
  7. Once cooked, remove the lamb from the oven and let it rest for 10 minutes.
  8. Drizzle lemon juice over the lamb and garnish with fresh parsley and cilantro before serving.
