  • Zucchini - 1 small, diced
  • Red onion - 1/2, thinly sliced
  • Black olives - 50 grams, sliced
  • Feta cheese - 75 grams, crumbled
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the matzah pieces on a baking sheet lined with parchment paper.
  3. Brush each matzah with olive oil and spread a thin layer of tomato sauce on top.
  4. In a bowl, combine the diced red bell pepper, zucchini, and red onion. Season with cumin, paprika, salt, and black pepper.
