- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomatoes - 400 grams, canned, crushed
- Vegetable broth - 500 milliliters
- Chickpeas - 200 grams, canned, drained and rinsed
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, celery, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Mix in the diced zucchini and continue to cook for another 3 minutes.
- Pour in the crushed tomatoes and vegetable broth, then bring the mixture to a simmer.
- Add the drained chickpeas, cumin, cinnamon, paprika, coriander, salt, and black pepper. Stir well to combine.
- Cover the pot and let the soup simmer for 15 minutes to allow the flavors to meld.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
