Ingredients

  • Fresh pasta sheets - 200 grams
  • Ground beef - 150 grams
  • Potatoes - 100 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato sauce - 200 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent (about 5 minutes).
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the diced potatoes, cumin, paprika, cinnamon, salt, and pepper. Cook for another 5 minutes until the potatoes start to soften.
  4. Remove the skillet from heat and allow the filling to cool slightly. Once cooled, place a spoonful of the filling on one end of each pasta sheet and roll it tightly to create a stuffed pasta roll.
  5. In a large pot, bring water to a boil and gently add the stuffed pasta rolls. Cook for about 10 minutes or until the pasta is tender. Drain and set aside.
  6. In the same pot, add the remaining tablespoon of olive oil and the tomato sauce. Simmer on low heat for 5 minutes, seasoning with additional salt and pepper as needed.
  7. Add the cooked pasta rolls to the sauce, gently coating them. Allow to simmer together for another 5 minutes to meld the flavors.
  8. Serve hot, garnished with fresh parsley.
