Ingredients
- Fresh pasta sheets - 200 grams
- Ground beef - 150 grams
- Potatoes - 100 grams, peeled and diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 200 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Fresh parsley - for garnish
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent (about 5 minutes).
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced potatoes, cumin, paprika, cinnamon, salt, and pepper. Cook for another 5 minutes until the potatoes start to soften.
- Remove the skillet from heat and allow the filling to cool slightly. Once cooled, place a spoonful of the filling on one end of each pasta sheet and roll it tightly to create a stuffed pasta roll.
- In a large pot, bring water to a boil and gently add the stuffed pasta rolls. Cook for about 10 minutes or until the pasta is tender. Drain and set aside.
- In the same pot, add the remaining tablespoon of olive oil and the tomato sauce. Simmer on low heat for 5 minutes, seasoning with additional salt and pepper as needed.
- Add the cooked pasta rolls to the sauce, gently coating them. Allow to simmer together for another 5 minutes to meld the flavors.
- Serve hot, garnished with fresh parsley.
