Ingredients

  • Phyllo pastry - 6 sheets
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Red bell pepper - 1, finely diced
  • Chickpeas - 100 grams, cooked and mashed
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30 grams, slivered
  • Sesame seeds - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the grated carrot, zucchini, and diced red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the mashed chickpeas, cumin, cinnamon, salt, black pepper, and chopped parsley. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
  5. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat with a total of 3 sheets.
  6. Spoon the vegetable mixture along one edge of the phyllo pastry. Sprinkle slivered almonds on top.
  7. Roll the phyllo over the filling into a log shape, then coil it into a spiral, tucking the ends underneath.
  8. Transfer the coiled pastry to a baking dish lined with parchment paper. Brush the top with remaining olive oil and sprinkle sesame seeds over it.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool slightly before slicing into wedges to serve.
