- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - 2 tablespoons, chopped
- Almond Milk - 100 ml
- Olive Oil - 1 tablespoon
- Slivered Almonds - 20 grams, toasted
Steps
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground lamb to the skillet. Cook until the lamb is browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2-3 minutes to allow the spices to bloom.
- Pour in the almond milk and let it simmer for 5 minutes, stirring occasionally until slightly thickened.
- While the sauce simmers, prepare the zucchini noodles by either spiralizing fresh zucchini or using store-bought zucchini noodles. Lightly sauté them in a separate pan for about 2-3 minutes until just tender.
- Combine the cooked zucchini noodles with the lamb mixture in the skillet. Toss gently to coat the noodles in the sauce.
- Remove from heat and stir in the chopped parsley.
- Serve hot, garnished with toasted slivered almonds.
