Ingredients
- Green or brown lentils - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Tomato - 1 large, chopped
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a large saucepan, heat the olive oil over medium heat and add the diced onion. Sauté for about 5 minutes until translucent.
- Add the minced garlic and sauté for another minute, stirring frequently to avoid burning.
- Stir in the diced carrot, red bell pepper, and zucchini, cooking for about 5-7 minutes until the vegetables are slightly softened.
- Add the chopped tomato, ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper. Stir well to combine all the spices with the vegetables.
- Pour in the rinsed lentils and vegetable broth, bringing the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes or until the lentils are tender.
- Stir occasionally and adjust salt and pepper as needed.
- Once cooked, remove from heat and let sit for a few minutes before serving.
- Serve warm, garnished with fresh cilantro.
