Ingredients

  • Red lentils - 100 grams
  • Walnuts - 50 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for frying
  • Flour - 2 tablespoons, for binding

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then cook them in a pot with 300 ml of water over medium heat for about 15-20 minutes, or until soft. Drain any excess water and let cool.
  2. In a large mixing bowl, combine the cooked lentils, chopped walnuts, finely chopped onion, minced garlic, grated carrot, and chopped cilantro.
  3. Add the ground cumin, ground coriander, paprika, salt, black pepper, and flour to the mixture. Mix well until combined. If the mixture feels too wet, add a little more flour.
  4. Form the mixture into small patties, about 5 cm in diameter and 1 cm thick.
  5. Heat olive oil in a frying pan over medium heat. Once hot, add the patties and cook for 4-5 minutes on each side, or until they are golden brown and crispy.
  6. Remove from the pan and drain on paper towels before serving. Enjoy with a side salad or your favorite dipping sauce.
