- Red lentils - 100 grams
- Walnuts - 50 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cilantro - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for frying
- Flour - 2 tablespoons, for binding
Steps
- Rinse the red lentils under cold water until the water runs clear, then cook them in a pot with 300 ml of water over medium heat for about 15-20 minutes, or until soft. Drain any excess water and let cool.
- In a large mixing bowl, combine the cooked lentils, chopped walnuts, finely chopped onion, minced garlic, grated carrot, and chopped cilantro.
- Add the ground cumin, ground coriander, paprika, salt, black pepper, and flour to the mixture. Mix well until combined. If the mixture feels too wet, add a little more flour.
- Form the mixture into small patties, about 5 cm in diameter and 1 cm thick.
- Heat olive oil in a frying pan over medium heat. Once hot, add the patties and cook for 4-5 minutes on each side, or until they are golden brown and crispy.
- Remove from the pan and drain on paper towels before serving. Enjoy with a side salad or your favorite dipping sauce.
