Lentil and Vegetable Kebabs

Ingredients
- Lentils - 100 grams (dry)
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Almond flour - 50 grams
- Skewers - 4 (if using wooden, soak in water for 30 minutes)
Steps
- Rinse the lentils under cold water and cook them in a pot with 300 ml of water for about 20 minutes or until tender. Drain and let cool.
- In a large mixing bowl, combine the cooked lentils, diced red bell pepper, grated zucchini, chopped red onion, minced garlic, grated carrot, chopped cilantro, cumin, paprika, cinnamon, salt, and black pepper.
- Add the almond flour and olive oil to the mixture, and mix well until everything is combined and holds together.
- Preheat your grill or BBQ to medium heat.
- Form the lentil mixture into kebab shapes and thread them onto the skewers.
- Grill the kebabs for about 15-20 minutes, turning occasionally until they are golden brown and cooked through.
- Remove from the grill and let cool slightly before serving. Enjoy warm!
