Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat the olive oil over medium heat and add the chopped onion, cooking until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and red bell pepper to the pot, sautéing for an additional 5 minutes until the vegetables soften.
  4. Stir in the cumin, coriander, turmeric, and cinnamon, cooking for 1-2 minutes until fragrant.
  5. Add the lentils and vegetable broth to the pot, bringing it to a boil. Reduce heat to low, cover, and let simmer for 20 minutes.
  6. After 20 minutes, stir in the basmati rice and season with salt and black pepper to taste. Cover and cook for an additional 15 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  8. Garnish with fresh parsley and serve warm.
